Red Curry Beef with Potatoes and Peanuts
Ingredients:
1 lb Boneless Beef (Tri-Tip, Flank Steak or Rib Eye) 3 Cups Unsweetened Coconut Milk 2 Tbsp Red Curry Base 2 ½ Cups Our Family® Beef Broth 3 Medium Potatoes (peeled & cut in big bite size chunks) 1 Large onion – quartered 3 Tbsp Fish Sauce 1 Tbsp Our Family® Brown Sugar 1 tsp Our Family® Salt 1 Cup Our Family® Crunchy Peanut Butter 2 Tbsp Fresh Squeezed Lime Juice or Tamarind Liquid
Instructions:
Slice beef thin into strips.
In medium sauce pan of heavy skillet bring:
1 cup coconut milk and curry base to a gentle boil.
Cook 2 more minutes.
Add remaining 2 cups coconut milk, broth, potatoes, onions, fish sauce, sugar, salt and bring to gentle boil.
Reduce heat and simmer until potatoes are tender 10 – 15 minutes.
Stir in crunchy peanut butter and lime juice.
Serve hot.
